IgE-mediated reactions are immediate. Lectin/anti-nutrient effects on gut permeability are delayed. If you are lentil-allergic, expect to react to chickpeas as well.


How Much Is Needed To React?
Dose-dependent
A few chickpeas in a salad are different from a large serving of hummus or chickpea curry. Canned chickpeas (heat-processed) may be better tolerated than home-cooked for some individuals. Chickpea flour (besan) in Indian cooking and gluten-free baking is a concentrated exposure.
Does Preparation Matter?
Yes — preparation significantly changes reactivity
Proper cooking (boiling for adequate time) reduces lectin content significantly. Canned chickpeas are thoroughly heat-processed. Pressure cooking is even more effective at reducing anti-nutrients. Raw or undercooked chickpeas retain more lectins and are harder to digest. Sprouting reduces some anti-nutrients but may not eliminate allergens. [10]
