Reaction Timeline
Most celery reactions are immediate — OAS, urticaria, anaphylaxis. Celery spice is particularly dangerous because the concentrated, dried form delivers high allergen doses. Celery is one of the few vegetable allergens that regularly causes anaphylaxis.


How Much Is Needed To React?

Celery has one of the lowest eliciting doses of any food allergen — some patients reacted to as little as 0.16 g celery spice in DBPC challenges. This means trace amounts in soups, seasonings, and stocks can be enough to trigger reactions.
Does Preparation Matter?
Yes — preparation significantly changes reactivity
55% of patients reacted to cooked celery, and 100% reacted to celery spice in clinical testing. This means cooking does NOT make celery safe — it reduces reactivity for some patients (those sensitized to heat-labile Api g 1) but not for those sensitized to heat-stable Api g 2 or Api g 5. Celery spice is the most dangerous form because it is concentrated and processed. [27][28]
